- 0.5 c Onion, minced
- 8 clove Garlic, crushed
- 1 28 oz can crushed tomatoes
- 2 6.5 oz cans Tomato sauce
- 2 6 oz cans Tomato paste
- 0.25 c water
- 2 tbsp Sugar, optional or sugar alternative
- 2 tbsp Olive oil
- 1.5 tsp Basil, dried
- 1 tsp Italian seasoning
- 0.5 tsp fennel seed
- 0.5 tsp Salt
- 0.25 tsp Black pepper, ground

Directions

Preparation of onions and garlic
1. Heat the olive oil over medium heat until it shimmers.
2. Saute the onions, stirring frequently, until they soften and shine, about three minutes.
3. Add the garlic.
4. Stir to combine.
5. Cook an additional two minutes.
Adding tomatoes and seasoning
1. Add 1/2 can of the crushed tomatoes.
2. Scrape the bottom of the pan to remove any stuck on bits.
3. Reduce heat to low.
4. Add remaining tomatoes.
5. Stir in 1/4 cup water.
6. Add the basil, red pepper flakes, salt, and sugar.
7. Stir.
8. If the sauce seems too thick, add additional water.
Simmering and serving
1. Allow sauce to simmer for 10 minutes to up to one hour.
2. If simmering for a longer, stir the sauce occasionally and add additional water as needed to keep the sauce at the correct consistency.
3. Enjoy with your favorite pasta!
Storage
1. Freeze whatever you are not going to use right away.
2. It makes approximately 2 large jars of sauce for about $6 total.
