- 0.5 c Honey
- 1 tbsp Honey

- 1.5 tbsp unflavored gelatin
- 0.5 tsp Vanilla extract, pure

Directions

Prepare the Honey Mixture
1. In a small saucepan bring 1/4 cup water and honey to a simmer and bring to 235 degrees.
Prepare the Gelatin Mixture
1. In a stand mixer using the whisk attachment add 1/4 cup water and sprinkle gelatin evenly.
2. Let it sit for 5 minutes or until the water starts to get absorbed and thicken.
3. Mix gelatin and water until combined well.
Combine and Mix the Ingredients
1. Add mixture from saucepan ensuring that it is 235 degrees.
2. Mix on medium for about 13-15 minutes or until mixture starts to fluff up and the bowl is cold to the touch.
3. Add vanilla and mix until combined.
Set the Marshmallow Fluff
1. Immediately pour marshmallow fluff onto parchment paper and spread out with a spatula so it’s about 1”.
2. Let it sit for about 30 minutes to an hour ensuring the marshmallow has set.
