Ingredients

Soup
- 1 quart vegetable broth
- 1 Yellow onion, small
- 4 clove Garlic
- 7 oz Tomato paste
- 18.3 oz Tomatoes, diced or pureed
- 3 c Celery, diced
- 1.5 c Carrots, diced
- 2 Red potatoes, diced
- 1 c Green beans, chopped
- 0.5 Kale, bunch
- 1 tbsp Italian seasoning
- 1 tbsp Basil
- 1 tsp Oregano
- 1 tbsp Parsley
- 1 Bay leaf
- 2 tsp Salt
- 3 tbsp date paste
- 0.5 c cashew cream
- 0.5 Lemon, juiced
Cashew Cream
- 0.5 c raw cashews
- 1 c water

Directions

Prepare the Soup
1. Begin by adding a small amount of water or vegetable broth to your soup pot.
2. On medium heat, sauté onions, garlic, and celery for 5-7 minutes.
3. Add a little water or broth as necessary to prevent sticking.
Add the Veggies
1. Add potatoes, carrots, and green beans.
2. Sauté for 3-5 minutes.
3. Add tomato purée, tomato paste, date paste, and all seasoning except for parsley.
4. Stir to combine.
5. Keep stirring to prevent sticking.
6. Continue to stir while the tomatoes and veggies cook for 3 minutes.
Add the Broth
1. Add vegetable broth.
2. Cover and simmer for 15-20 minutes or until veggies are done.
3. Add kale and stir.
Finish and Serve
1. Stir in cashew or coconut cream.
2. Add parsley, salt, black pepper, and lemon juice.
3. Mix and simmer for a few minutes.
