Ingredients

- 4 Eggs
- 120 grams Mayonnaise
- 45 grams Dutch process cocoa powder
- 30 grams Unsweetened cocoa powder
- 220 grams Cake flour
- 325 grams White sugar
- 280 grams Oil
- 2 tsp Baking powder
- 3 tsp Instant espresso powder
- 0.5 tsp Baking soda
- 6 tbsp Buttermilk
- 1 tbsp Instant espresso powder
- 50 grams Water, hot
- 50 grams Brown sugar

Directions

Method
1. whip the eggs with the sugar until the mixture is lighter in colour and frothy. Mix with the oil and mayo.
2. Sift the dry ingredients into the mixture and fold until it is just mixed through.
3. Fold in the milk last and place in 2 9-inch circle pans. Bake at 350F for 25-30 minutes, until a skewer comes out clean when inserted.
4. To make the heart shape, cut a parchment circle with a diameter of the size desired. Fold in half, then cut a half heart from the corner to the fold of the circle.
5. Outline that shape on your cake and cut. Brush the cake with a mixture of espresso powder, water and brown sugar to keep it moist and flavourful.
6. Decorate with your favourite buttercream or ganache and serve!
