Ingredients

Main Dish
- 5 tbsp Olive oil, separated
- 1 tbsp Garlic, minced
- 2 Zucchinis, medium, chopped
- 0.5 White onion, medium, chopped
- 0.5 Red bell pepper, chopped
- 1 lb ground chicken
- 1 tbsp Ground cumin
- 1 tbsp Chili powder
- 1 tbsp Garlic powder
- 0.5 tbsp Paprika
- 0.5 tsp pink Himalayan salt
- 0.5 tsp Coarse black pepper
- 1 can diced tomatoes with green chilis
- 0.5 c Chicken Broth
- 1 tbsp Fresh cilantro, chopped for garnish
- 0.5 c grated mexican cheese

Directions

Preparation
1. Preheat oven to 350 degrees.
2. In a large skillet heat 2 tbsp olive oil on medium heat.
3. Add garlic to skillet and sauté for about 2 minutes or until garlic is a golden brown.
4. Add zucchini, onions, red bell pepper, and sauté for about 10 minutes or until fragrant.
5. Push vegetables to the side of skillet and add ground chicken.
6. Cook chicken until no longer pink.
7. Mix chicken with vegetables and mix in seasonings until combined well.
8. Add can of diced tomatoes with green chilis and chicken broth.
9. Mix until combined well.
10. Cover skillet and turn temperature to medium low stirring periodically.
Preparing the Tortillas
1. On a large baking sheet add parchment paper and corn tortillas.
2. In a small bowl mix 3 tbsp olive oil and 1/2 tbsp pink Himalayan salt.
3. Brush both sides of corn tortillas with olive oil mixture.
4. Place in oven for 3 minutes.
Final Steps
1. Remove tortillas from oven and immediately fill with chicken mixture.
2. Top with shredded cheese and garnish with cilantro.
