- 1 pkg Simply potatoes shredded hash browns
- 0.5 lb Bacon, chopped
- 1 Onion, diced
- 1 c Cream
- 1 c Half & half
- 4 oz Cream cheese, room temperature
- 2 c Cheddar cheese, shredded
- 0.25 tsp Nutmeg
- 2 tsp Italian seasonings
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 1 tsp ground mustard
- 1 tbsp Butter, softened

Directions

Preparation
1. Preheat your oven to 400° F.
2. Heat your skillet to medium high heat and cook your bacon. Once your bacon is cooked, remove it from the pan and keep the grease.
3. Add in your diced onions to the same pan and sauté until translucent.
4. Once they are translucent, set aside.
Creating the Mixture
1. In a bowl, add your cream, half and half, cream cheese, half of the bacon and all of the onions.
2. Then add all of your seasonings.
3. Next add half of the cheese.
4. Use the whisk to mix everything together.
Assembling the Casserole
1. In a Cast iron skillet, spread melted butter using a rubber basting brush all around the edges and bottom.
2. Add half of your bag of hash browns to the bottom of the skillet. Then add in half of your mixture and repeat the process, finishing with the mixture on top.
3. Sprinkle the rest of the cheese on top as well as the bacon.
4. Tightly cover with foil and bake for 40 to 45 minutes until bubbly.
5. For the last 5 minutes, set your oven to low broil and finish off the top.
6. Let your casserole cool for about 5 minutes before serving. Be careful because it will be very hot.
