"Main Ingredients"
- 0.5 c dashi
- 0.25 c dry sake
- 2 tbsp Soy sauce
- 1 tbsp Sugar, plus more to taste
- 0.5 lb beef ribeye or chuck steak
- 1 tsp Fresh ginger, grated
- Salt
- 2 c White rice, cooked
- 2 Eggs, large, poached
- Scallions, sliced
- beni-shoga
- togarashi

Directions

Preparing the Sauce
1. Combine onion, dashi, sake, soy sauce, and sugar in a medium saucepan or saucier and bring to a simmer over medium heat.
2. Cook, stirring occasionally, until onion is softened, about 5 minutes.
Adding the Beef
1. Add beef and cook, stirring until beef is cooked through and liquid has reduced down to an intensely flavored broth, about 5 minutes.
2. Stir in ginger and simmer for 1 minute longer.
3. Adjust seasoning with salt and sugar to taste.
Serving the Dish
1. Divide rice between 2 to 3 bowls and top with beef and sauce mixture.
2. Garnish each bowl with a poached egg (if using), sliced scallions, beni-shoga, and togarashi.
3. Serve immediately.
