Ingredients

"Gulab" Syrup
- 2 cups Sugar
- 2 cups water
- 3 Cardamom, cracked
- 1 pinch Saffron
- 0.25 tsp rose water
"Jamun"
- 9 oz Khoya/Mava
- 2.5 oz Paneer
- 4 tbsp All purpose flour
- 2 cups Oil, for frying

Directions

Preparing the Syrup
1. In a pan add water, sugar, saffron and rose water.
2. Bring it to a boil and once the sugar is completely dissolved, turn off the heat and set it aside.
3. Let the sugar melt and don’t make the consistency too thick otherwise the jamun won’t soak in the syrup.
Preparing the Dough
1. Roughly chop the Khoya and blend it with a bit of milk or heavy cream. About 2 tsp.
2. Once it’s coarsely chopped, place it on a flat surface and start making a smooth paste. Either with a palm of your hand or a roller.
3. Then with the help of cheese grader, add paneer.
4. Mix it well and then add tsp of flour.
5. Keep adding a tbsp and mixing until you get a smooth consistency.
Making the Dough Balls and Frying
1. Now make (an inch in diameter) size dough balls. You should have about 24.
2. Cover it with damp paper towel.
3. Add the oil to a frying pan (wok in my case) and once the oil is low to medium heat, take a spoon and start stirring in a clock wise direction.
4. Don’t stop stirring and keep adding half the dough balls.
5. It should take you 10 minutes to get the desired golden color.
6. Once it’s cooked immediately place it in a lukewarm sugar syrup.
7. Let it sit for at least an hour or best 5-6 hours.
