Ingredients

- 1 Tbs Olive oil
- 1 tsp cilantro seeds
- 1 tsp Cumin seeds
- 1 tsp mustard seeds
- 0.25 cup Onion, finely chopped
- 1 clove Garlic, finely chopped
- 1 Tomato, grated
- pinch salt and fresh black pepper
- 1 cup Lentils, preferably black
- 2 cup fish stock
- 2 Tbs Sherry wine vinegar
- 12 shrimps
- 0.5 cup Greek yogurt, unsweetened
- 1 Tbs Mint leaves, washed, disinfected and chopped

Directions

1. In a wide pan, heat the oil and add the seeds; toast for 30 seconds or until they start to pop. Add the onion and garlic and cook until the onion is translucent. Add the grated tomato. Let the liquid evaporate and add the lentils with the stock. Bring to a boil, lower the heat and simmer until the lentils soften, for around 20 minutes. Add the vinegar and keep warm to the side.
2. Season the shrimp with salt and pepper and sear in a hot pan until they turn a bright orange on both sides. Serve over a bed of lentils on a plate, lay 3 shrimps on top. Add some yogurt and garnish with a splash of olive oil and mint leaves.
3. Share and enjoy.
Tip:
1. Remove the shrimp from the heat once they start to curl so they don’t harden as much.
