Ingredients

Salad
- 0.5 lb fingerling potatoes
- 0.5 lb Green beans, sliced
- 1 lb cooked octopus
- 2 tbsp Olive oil
- Kosher salt
- coarse black pepper
- 0.5 pint Cherry tomatoes, halved
- 0.5 c kalamata olives, sliced
- 0.25 c Parsley, chopped
- 0.5 Lemon, juiced
Dressing
- 0.5 c Olive oil
- 0.25 c Red wine vinegar
- 1 tbsp grainy mustard
- 1 clove Garlic, grated
- 0.5 tsp Dried basil
- 0.5 tsp Dried oregano
- 0.25 tsp crushed red pepper flakes
- Kosher salt
- coarse black pepper

Directions

Preparing the potatoes and green beans
1. Cook potatoes in boiling salted water until just fork tender, about 8 to 10 minutes.
2. During the last 2 minutes of cooking, add the green beans to the pot and continue to cook for the remaining time.
3. Drain in a colander and set aside to cool.
Preparing the octopus
1. Drizzle the octopus with olive oil and season lightly with salt and pepper on both sides.
2. Place on hot grill and cook until charred on both sides, about 4 to 6 minutes per side.
3. Transfer to a cutting board slice into rounds.
Preparing the dressing
1. To make the dressing, whisk together the oil, vinegar, mustard, garlic, basil, oregano, red pepper, and a large pinch of salt and pepper until evenly combined and well-emulsified.
2. Give it a taste and adjust seasoning accordingly.
Combining and serving
1. In a large mixing bowl, combine the cooled potatoes, green beans, tomatoes, olives, parsley, lemon juice, octopus and a pinch of salt and pepper.
2. Drizzle in about half of the dressing and toss to evenly combine.
3. Transfer to a serving platter and drizzle with more of the remaining dressing.
4. Serve and enjoy.
