Ingredients

For the vinaigrette
- 0.333 cup Olive oil
- 3 Tbs White vinegar
- 1 clove Garlic, finely chopped
- 0.5 cup Basil, washed and disinfected
- 1 pinch salt and pepper
For the salad
- 1 cup Quinoa, cooked
- 2 Tbs Red onion, chopped
- 0.5 cup Dried peas, cooked
- 0.25 cup Parsley, finely chopped
- 0.5 cup Walnuts, toasted and chopped
- 0.5 cup Goat cheese, crumbled

Directions

For the vinaigrette
1. In a blender, mix all the ingredients and blend until fully integrated. Place to the side.
For the salad
1. In a bowl, mix the quinoa, onion, peas, walnut and two tbsp of basil vinaigrette. Mix until fully incorporated. Serve and sprinkle with goat cheese and parsley.
2. Share and enjoy.

1. Dried peas are one of the best vegetable origin sources of protein. 1/2 cup of cooked peas provide 10g of lean protein.J112
