- 1.5 c All purpose flour
- 0.333 c fine cornmeal
- 1 tbsp Baking powder
- 1 tsp granulated garlic
- 0.5 tsp Paprika
- 0.5 tsp Salt
- 0.5 tsp Black pepper
- 3 Large eggs
- 1.5 c Buttermilk
- 6 tbsp Unsalted butter, melted
- 1 c Cheddar cheese, shredded
- 1 4 oz can diced green chilies
- 2 7.06 oz package Revol Greens® Organic Southwest Baja Salad kits

Directions

Preparation of the oven and ingredients
1. Preheat the oven to 250°F.
2. In a large bowl, whisk together the flour, cornmeal, baking powder, garlic, paprika, salt and pepper.
3. Separate the eggs and add the yolks to the measuring cup with the buttermilk.
4. Give it a whisk and set aside.
5. In a separate clean bowl, beat the egg whites with a handheld mixer until soft peaks form; set aside.
Mixing the ingredients
1. Add the buttermilk and egg mixture to the dry ingredients along with the melted butter, cheese and green chilies.
2. Stir until well combined.
3. Add the whipped egg whites in batches, carefully folding until just combined.
Cooking the waffles
1. Preheat your waffle iron to the highest setting.
2. Once hot, grease lightly with cooking spray and add about ¼ cup of the batter.
3. Cook according to the machine’s settings until golden brown and crisp.
4. Transfer to a wire rack set over a baking sheet and keep warm in the oven.
Assembling the dish
1. To assemble, in a large bowl, toss together the contents of your Revol Greens® Organic Southwest Baja Salad Kit.
2. Plate the waffles and top with the salad.
3. Serve and enjoy.
