Ingredients

- 1 c raspberry granola
- 12 Medjool dates
- 2 c Cashews
- 2 tbsp Cocoa powder
- 1 tbsp Honey

Directions

1. Blend the raspberry granola in a food processor until it turns into fine crumbs.
2. Pit the medjool dates and soak them in warm water for 10 minutes until they soften if needed.
3. Place the pitted dates, cashews, cocoa powder and honey in the bowl of a large food processor. Blend on high until a thick “dough” is formed and the mixture feels sticky.
4. Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time, you can let them set in the fridge for 5 minutes.
5. Roll the date bites into the crushed granola and pressing gently so they adhere. Makes about 12-14 bites.
