Ingredients

- 2 tbsp EVOO
- 1 tbsp gochujang paste
- 2 medium tomatoes
- Scallion, to taste
- 3 c vegetable broth
- 2 c water
- 5 medium potatoes
- 2 medium carrots
- 1 tbsp sea salt
- 0.125 tsp Black pepper
- 1 c Red lentils

Directions

Preparation of Gochujang Paste and Veggies
1. Drizzle EVOO to a pan over medium-high heat and add the gochujang paste, stir, and add chopped tomatoes and scallions.
2. Stir continuously and cook for 3-4 minutes until the veggies soften.
Preparation of Potatoes and Carrots
1. Peel and chop potatoes & carrots into cubes.
2. Pour vegetable broth and water, add cubed carrots and potatoes, and season with salt and pepper.
3. Bring to a boil and then lower the temperature to a simmer; cook covered for 10 minutes.
Adding Lentils and Final Cooking
1. Rinse lentils and add them to soup (they cook very quickly!).
2. Cook until veggies, potatoes, and lentils are softened — around 5-10 more minutes.
3. Enjoy!
