- 1 lb calamari
Milk Mixture
- 0.5 c Milk
- 0.5 tsp Salt
Flour Mixture
- 0.5 c Flour
- 3 tbsp Cornstarch
- 0.5 tsp Salt
- 1 tsp Baking powder
- 0.25 tsp Black pepper
Sauce
- 4 clove Garlic
- 1.25 tsp gochujang
- 4 tbsp Honey
- 1 tsp Salt
- 1.5 tsp Rice vinegar
- 0.5 Lime, juiced
- 0.5 Lime, zested
- 0.5 c water
- 0.125 tsp Sesame oil, optional

Directions

Preparing the Calamari
1. Clean your calamari and cut it into 1 inch pieces.
2. In a small bowl, add your milk and salt.
3. Add your calamari pieces to the milk and let it soak for 30 minutes.
4. In a bowl, make your flour mixture by whisking together flour, cornstarch, salt, baking powder, and black pepper.
5. Toss your calamari in the flour mixture.
6. Shake off any excess flour mixture.
7. In a pan, heat neutral oil.
8. Working in batches, fry your calamari until they’re a golden brown.
9. Allow calamari to drain off on a baking rack on a sheet pan.
Making the Sauce
1. In another pan, add your garlic.
2. Saute until softened.
3. Then add your gochujang, rice vinegar, water, honey, lime juice and lime zest.
4. Allow sauce to thicken and toss with your calamari.
5. Enjoy immediately.
