Ingredients

- 5 tbsp Unsalted butter, divided
- 1 Small onion, sliced
- Salt
- Black pepper
- 1 tsp Fresh thyme leaves
- 4 tbsp Flour
- 3 c beef stock
- 1 tbsp Worcestershire sauce
- 1 package gnocchi
- 4 oz cheese curds
- 2 tbsp Fresh chives, chopped

Directions

Prepare the Onion and Gravy
1. Melt 3 tablespoons of butter in a saucepan and add the onion.
2. Season with a pinch of salt, black pepper and thyme.
3. Cook, stirring often, until the onions have softened and just begun to brown.
4. Stir in the flour and cook for about 30 seconds or so.
5. Then stir in the beef stock.
6. Cook until thickened and simmering.
7. Season with a pinch more salt, plenty of black pepper, and Worcestershire sauce.
8. Keep warm.
Prepare the Gnocchi
1. Cook the gnocchi according to package directions in boiling salted water and then drain.
2. Melt remaining 2 tablespoons butter in a skillet and add the cooked gnocchi.
3. Season with a pinch of salt and pepper and cook until golden brown.
Serve the Dish
1. Divide between serving plates.
2. Top with cheese curds and pour gravy over the top.
3. Garnish with chives.
4. Serve and enjoy!
