Ingredients

Cookie Dough
- 0.5 c Unsalted butter, or 1/2 cup vegetable shortening + 1Tbsp water
- 0.25 c Brown sugar
- 0.5 c Granulated sugar
- 1 tsp Vanilla extract, pure
- 6 Tbsps Pumpkin Puree
- 1.5 c Bob’s Red Mill 1:1 gluten free flour
- 0.25 tsp Baking powder
- 0.25 tsp Baking soda
- 2 tsps Cinnamon
- 1 tsp pumpkin pie spice
- 0.5 c white chocolate chips
Sugar Cinnamon Mixture
- 0.25 c Granulated sugar
- 0.5 tsp Cinnamon

Directions

Preparation
1. Preheat oven to 350°F.
2. Line one large baking sheet and a small baking sheet with parchment paper.
Mixing the Ingredients
1. In a medium bowl, mix together the butter/shortening, brown sugar and granulated sugar until smooth.
2. Add in vanilla and pumpkin and mix.
3. Mix in flour, baking powder, baking soda cinnamon and pumpkin pie spice.
4. Add in chocolate chips and mix.
Forming and Baking the Cookies
1. Roll dough into 1.5 tablespoon sized balls and flatten a bit.
2. In a plate, mix the 1/4 granulated sugar and cinnamon.
3. Roll each cookie into the sugar mixture and place on baking sheet.
4. Bake for 10 – 12 minutes or until the edges are set.
5. Enjoy!
