Ingredients

- 1.5 c gluten free flour, containing xanthan gum
- 0.75 tsp fine sea salt
- 1 tsp Baking soda
- 1 tsp Baking powder
- 0.5 tsp Ground cinnamon
- 0.25 tsp Ground ginger
- 0.125 tsp Ground nutmeg
- 0.125 tsp Ground cloves
- 7.5 oz Pumpkin Puree, half a 15oz can
- 0.75 c Light brown sugar
- 0.25 c Maple syrup
- 1 Large egg
- 0.333 c Oil
- 1.5 tbsp pepitas

Directions

Preparing the Batter
1. In a bowl, mix together gluten-free flour, salt, baking soda, baking powder, cinnamon, ginger, nutmeg, and cloves. Set aside.
2. In a large bowl, combine pumpkin, sugar, maple syrup, egg, and olive oil.
3. Add the flour mixture and stir.
4. Cover the bowl and let the batter rest for 30 minutes.
Preheating the Oven and Preparing the Loaf Pan
1. While the batter rests, preheat the oven to 340°F/170°C (320°F/160°C for dark metal loaf pan).
2. Grease and line an 8.5x4.5in (20x10cm) loaf pan with parchment paper.
Baking the Bread
1. Pour the batter into the prepared loaf pan and top with pepitas.
2. Bake for 55-60 minutes (45-50min for dark metal pans), or until a skewer inserted in the middle comes out clean.
3. Let the bread rest in the pan for 5-10 minutes before taking it out on a wire rack to cool completely.
