Ingredients

- 1 Tbs Olive oil
- 0.5 Onion, chopped
- 1 Tbs Ginger, grated
- 2 tsp Turmeric, grated
- 2 Carrots, chopped
- 150 g Red lentils, rinsed
- 4 cup Vegetable stock
- 0.5 cup non-dairy milk
- 1 Lemon

Directions

1. Heat the oil in a wide pot and add the onion, cook until it softens. Add ginger, turmeric, carrots and cook for 4 more minutes. Add the lentils and pour the stock. Bring to a boil and lower the heat.
2. Simmer for 20 minutes or until the lentils are soft. Take 2 cups of soup and blend them with milk and lemon juice. Return to the pot and let it thicken.
3. Serve and garnish with chopped parsley and a splash of olive oil.
4. Share and enjoy.

1. Both the ginger and turmeric contain compounds that help with reducing inflammation and joint pain.
