Ingredients

Chicken Marinate
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 2 tbsp Soy sauce
- 2 tsp Ginger, minced
- 1 tsp Garlic, minced
- 1 tsp Black pepper
Coconut Rice
- 2 c Jasmine Rice
- 13.5 oz Full fat coconut milk, once can
- 1.5 c Water, or coconut water
- 0.5 tsp Salt
- 2 tbsp Shredded coconut, optional
Veggies
- 1.5 c Frozen broccoli
Chicken
- 4 Chicken breasts, or boneless chicken thighs
- 1 tbsp Butter
- 1 tbsp Olive oil

Directions

Marinade the chicken
1. Mix the marinade together and marinate the chicken for at least 2 hours.
One pot preparation
1. In a dutch oven or heavy bottom pan, melt the butter on medium heat.
2. Add the chicken and cook until browned; About 4 minutes per side. Remove the chicken from the pot *The chicken will finish cooking with the rice later on in the recipe*
3. If the soy sauce burned the bottom of the pan, clean the pan before continuing on to the next step.
Rice
1. In the same dry pot, toast the shredded coconut until slightly brown.
2. Add your washed rice to the pot and mix with the shredded coconut for 2 minutes
3. Add the can of coconut milk and water then bring to a boil.
4. Add the chicken back to the pot on top of the rice mixture.
5. Top with with the frozen broccoli.
6. Cover and cook for 20 minutes until the rice is done.
7. Serve hot!
