Ingredients

Ramen
- 4 packs Ramen
Chicken
- 4 Chicken thighs, Boneless
- 2 tbsp Mirin
- 1 tbsp light soy
- 1 tbsp Dark soy
- 2 clove Garlic, minced
- 0.5 inch Ginger, minced
- 0.25 tsp Cayenne pepper
- 0.25 tsp Onion powder
Broth
- 5 cups Kettle and Fire Chicken Bone Broth
- 3 stalks Green onions, chopped
- 1 inch Ginger, sliced
- 3 clove Garlic
- 1 Dried Kombu
- 6 shitaki mushrooms
Tare
- 0.5 Cup Soy sauce
- 0.5 Cup Mirin
- 0.25 cup Shaoxing wine
- 1 Tbsp Vinegar
- 1 inch Ginger, chopped
- 3 Tbsp Brown sugar
- 2 stalks Green onion
- 3 clove Garlic, smashed

Directions

For the marinade
1. Add ingredients for the marinade to a bowl and mix.
2. Add chicken to the bowl, coat the chicken in marinade for at least 30 minutes.
For the stock
1. In a stock pot, pour in the Bone Broth, Green Onion, garlic and ginger.
2. Bring this to a boil then reduce to a simmer and cook for about 40 minutes.
3. Remove from heat then add the Kombu and Shiitake Mushrooms, cover and let steep for 20 minutes.
4. Then strain.
For the chicken
1. In a hot skillet, cook the chicken until it reaches 165 internal, flipping over so it doesn’t burn.
2. For additional flavor, glaze the chicken with a soy sauce and brown sugar mixture.
For the tare
1. Combine the ingredients above in a small pot, bring to a boil and reduce to a simmer and let it reduce by half.
For the noodles
1. For the noodles, I used Somen noodles but the regular instant noodles will work also, just toss the flavor packet.
To build the bowl
1. To build the bowl, add a couple tablespoons of the Tare followed by the broth.
2. Add in the noodles then the topping of your choice.
3. I used Green onions, Bok Choy, Shiitake Mushrooms, and a Soy Marinated Egg.
4. Enjoy!
