- 2 lb beef
- 1 beef shank
- 0.5 c Oil
- 2 Onion, medium
- 1 Parsley, large bunch
- 1 Chives, large bunch
- 1 fenugreek
- 1 Cilantro, large bunch
- 1 c kidney beans
- 6 dried limes
- 2 tsp Turmeric
- 1.5 tbsp Salt
- 1 tbsp Black pepper
- 1 tbsp fenugreek

Directions

Preparation of Greens
1. Wash all the greens thoroughly before chopping them.
2. You can finely chop them by hand or use a chopper to save time.
3. Heat the frying pan and add the chopped greens and let them dry out.
4. When they start to stick to the pan, add a tablespoon of olive oil.
5. Keep cooking until most of the water is dried out.
Preparation of Meat and Beans
1. In another pot, add olive oil.
2. Once hot, add onions.
3. Sauté for a few minutes before adding in the turmeric.
4. Mix it before placing in the meat.
5. Keep stirring to make sure it doesn’t burn.
6. Once it looks evenly cooked, add in the kidney beans and water.
Final Cooking and Serving
1. Now add the rest of the ingredients including the cooked greens.
2. Let it slow cook for 5-6 hours or if you are impatient then use an instant pot for 30-40 minutes.
3. Enjoy it with Persian rice and salad.
