Ingredients

Chicken Thighs
- 1 lb Chicken thighs, skin-on
- 0.25 tsp Salt
- 0.125 tsp Black pepper
- 1 tbsp Oil
- 4 tbsp Sake
- 1 tbsp Unsalted butter
Sauce
- 2 tbsp Soy sauce
- 2 tbsp Sake
- 1 tbsp Mirin
- 1 tbsp Sugar
- 4 Garlic cloves, minced

Directions

Preparing the Chicken
1. Sprinkle salt and black pepper on both sides of the chicken.
2. Coat the chicken with sweet potato starch, dust off the excess.
Preparing the Sauce
1. Combine the sauce ingredients in a bowl and set aside.
Cooking the Chicken
1. In a frying pan, cook the chicken over medium heat starting with the skin side down. Cook for around 4 minutes then flip over and cook for another 4 minutes.
2. Add sake and cook the chicken with the lid on until the cooking liquid has dissolved.
3. Add in the sauce mixture and butter. The sauce should start to thicken. Coat the chicken well with the sauce.
Serving the Dish
1. Serve the chicken with some cooked white rice.
