Ingredients

Chicken
- 2 Chicken breasts, large, cut horizontally, then vertically, and pounded as thin as possible
- 0.667 c pickle juice
- 2 Eggs
- 0.333 c Buttermilk
- 1 c all-purpose flour
- 0.5 c Cornstarch
- 1 tbsp Paprika
- 2 tsp Garlic powder
- 1 tsp Cayenne pepper, adjust to taste
- 1 tsp Onion powder
- salt and pepper, to taste
- 6 pretzel buns
- Mayonnaise
- lettuce leaves
- sliced pickles
- Canola oil, or vegetable oil (for frying in a pan)

Directions

Marinade
1. Place chicken in a bowl and cover with pickle juice.
2. Marinate in the refrigerator for at least 1 hour.
Preparation
1. Remove chicken from the pickle juice, pat dry with paper towels.
2. Whisk together the eggs and buttermilk in a bowl.
3. In another bowl, mix the flour, cornstarch, paprika, garlic powder, cayenne pepper, onion powder, salt, and pepper.
4. Dip each chicken piece into the egg and buttermilk mixture, then dredge in the flour mixture.
5. Heat a thin layer of canola or vegetable oil in a pan over medium-high heat.
6. Fry the chicken until golden brown and cooked through, about 4-6 minutes per side, depending on the thickness.
7. To assemble your sandwich, spread mayonnaise on both sides of the pretzel bun.
8. Add lettuce, the fried chicken, and top with sliced pickles.
