Ingredients

- 4 branzino fillets
- 1 c Cornstarch
- 2 tbsp truffle salt
- 2 Sweet potatoes, diced small
- 0.5 Red onion, sliced thin
- 4 Green onions, whites chopped
- 3 Garlic cloves, sliced thin
- 2 habaneros
- 1 Corn, cut off the cob
- 4 shiitake mushrooms, sliced thin

Directions

Preparing the Hash
1. Coat the bottom of a cast iron or non stick pan with olive oil.
2. Add in the potatoes. Toss around to coat with the olive oil and season very generously with salt, pepper, and garlic powder. Let sear for 5 minutes before adding in vegetables and continue cooking, stirring occasionally until the potatoes are lightly browned and tender. About 5-7 more minutes.
3. Remove from heat, cover and set aside while you prep the fish
Frying the Fish
1. Pat the fish dry with paper towels. Season lightly with truffle salt and black pepper on both sides.
2. On a plate, combine corn starch and truffle salt to taste. Lightly coat the fish in the starch and fry in whatever oil you want for at 330 degrees F for 3-4 minutes. Let drain on a paper towel and that's it!
