Ingredients

Bread Mixture
- 6 slices of bread
- 3 Eggs
- 0.5 c Milk, dairy or plant-based
- 1 tsp Vanilla extract
- 1 tsp Ground cinnamon
- 2 tbsp Maple syrup, or honey
- Coconut oil, or cooking spray, for greasing
Oats Topping
- 0.5 c Rolled oats
- 2 tbsp Coconut oil, melted
- 1 tbsp Maple syrup, or honey
- 0.5 tsp Ground cinnamon

Directions

Preheat Oven
1. Preheat your oven to 350°F (175°C).
2. Grease a muffin tin with coconut oil or cooking spray.
Prepare Bread
1. Cut the slices of bread into small cubes or tear them into bite-sized pieces.
Make French Toast Mixture
1. In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and maple syrup until well combined.
Soak Bread
1. Add the bread cubes to the egg mixture and gently toss until all the bread is evenly coated.
2. Allow the bread to soak for about 5 minutes, ensuring it absorbs the liquid.
Fill Muffin Tin
1. Spoon the soaked bread cubes into the prepared muffin tin, filling each cup almost to the top.
Prepare Oats Topping
1. In a separate bowl, combine the rolled oats, melted coconut oil, maple syrup or honey, and ground cinnamon.
2. Stir until the oats are evenly coated.
Top Muffins with Oats Mixture
1. Sprinkle a generous amount of the oats topping over each muffin, pressing lightly to adhere.
Bake
1. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and cooked through.
Cool and Serve
1. Allow the French toast muffins to cool in the tin for a few minutes before carefully removing them.
2. Serve warm with additional maple syrup, if desired.
