Ingredients

- 2 tbsp Olive oil
- 2 tbsp Unsalted butter
- 2 large onions
- Kosher salt
- Black pepper
- fresh thyme sprigs
- splash White wine
- 3 c all-purpose flour
- 2 tsp Baking powder
- 0.5 tsp Baking soda
- 0.667 c Unsalted butter, cold
- 1.5 c Gruyère cheese
- 0.333 c Scallions, sliced
- 0.667 c Heavy cream

Directions

Preparing the onions
1. Set a large skillet over medium heat with the oil and butter.
2. Once hot, add the onions.
3. Season with a large pinch of salt, pepper and fresh thyme.
4. Cook, stirring often, until caramelized, about 30 minutes.
5. Deglaze with wine and set to the side to cool.
Preparing the oven
1. Preheat oven to 400F.
Making the dough
1. In a large bowl, stir together the flour, baking powder, baking soda, 1 teaspoon salt and 1/2 teaspoon black pepper.
2. Add the butter and rub with your fingers until coarse crumbs form.
3. Stir in 1 cup cheese, scallions and cooked onions.
4. Add heavy cream and stir until the dough comes together.
Shaping and baking the scones
1. Transfer to a lightly floured work surface and knead into a disc about 8 inches.
2. Cut into 8 wedges and arrange onto a baking sheet lined with parchment.
3. Brush with heavy cream and top with remaining cheese, black pepper and thyme.
4. Bake until golden brown, about 18-20 minutes.
