Ingredients

- 2 Chicken thighs
- 1 tsp neutral vegetable oil
- Salt, to taste
- 1 banana
- 1.25 cups Heavy cream
- 3.5 tbsp chili sauce
- 3.5 oz peanuts
- Black pepper, freshly ground
- 1 c long grain white rice

Directions

1. Preheat the oven to 400ºF.
2. Cut the chicken into 1-inch cubes.
3. Heat some oil in a pan over high heat, and brown the chicken for 5 minutes, stirring several times.
4. Season to taste with salt and pepper.
5. Transfer the chicken to a baking dish.
6. Peel and slice the bananas.
7. Add them to the same pan the chicken just cooked in, over medium high heat.
8. Caramelize on both sides, then transfer them on top of the chicken in the same tray.
9. Combine the cream and chili sauce.
10. Pour the mixture over the chicken and bananas.
11. Sprinkle peanuts on top.
12. Bake in the middle of the oven for about 20 minutes.
13. Serve with rice.
