Ingredients

Cupcake
- 280 g All purpose flour
- 55 g corn flour/starch
- 0.5 teaspoon Baking soda
- 1 teaspoon Baking powder
- 0.25 teaspoon Salt
- 115 g Unsalted butter
- 158 g unflavored oil
- 300 g Sugar
- 3 Large eggs
- vanilla
- 1 teaspoon White vinegar
- red gel color
- 340 g Buttermilk
- 300 g full fat milk
- 40 g vinegar
Ermine Frosting
- 34 g All purpose flour
- 100 g Sugar
- 180 ml Milk
- 170 g Unsalted butter
- pinch Salt
- 1 teaspoon vanilla

Directions

For the cupcakes
1. In a bowl, add the flour, corn starch, baking powder, baking soda, and salt. Mix until combined and keep it aside.
2. In another bowl, add butter, oil, and sugar. Mix until pale and fluffy (for 3-5 minutes).
3. Add eggs, one at a time, mixing 10 seconds in between.
4. Add vanilla, vinegar, and food color. Mix until combined.
5. From this step, don't overmix, just fold in and mix until combined. Add half of the buttermilk and mix until combined.
6. Add half of the dry mix. Fold in and mix until combined.
7. Add the rest of the buttermilk and mix until combined.
8. Add the rest of the dry mix. Fold in and mix until combined.
9. Transfer to cupcake pans and make heart shape using aluminum foil as shown. This batter makes 24-26 cupcakes.
10. Bake at 160°C for 15-20 minutes or until a toothpick/knife comes out clean.
For the frosting
1. In a pan, add flour, sugar, and milk. Mix and cook on medium heat until it thickens into a pudding consistency with no lumps. If there are any lumps, filter and transfer to a plate.
2. Cover with plastic wrap touching the top surface of the pudding. Let it chill and cool completely.
3. In a bowl, add butter, salt, and vanilla. Mix until light and fluffy.
4. Add the cooled pudding in 4 batches, mixing in between. Mix until thick, light, and fluffy.
5. If the frosting is soupy, keep in the fridge for 10 minutes and mix until thick and fluffy.
6. If the frosting is curdled, melt on a double boiler for 20-30 seconds until it slightly melts. Mix until smooth and fluffy.
