Ingredients

Cake
- 0.5 c blueberry puree
- 0.5 c Cocoa powder
- 1 tbsp Coconut flour
- 1 tbsp Baking powder
- 0.5 c date paste
- 1.5 tsp vanilla
- pinch Salt
Frosting
- 1 c raw cashews
- 0.5 c plant milk
- 1 tsp vanilla
- 4 Medjool dates, soft, pitted
- coconut cream topping
- 0.5 c Blueberries, pureed for topping

Directions

Preparation
1. Preheat oven to 350.
2. Line a 6-inch baking pan with parchment paper.
Prepare the Blueberries
1. Blend 1 cup of blueberries into a puree.
2. Divide for batter and optional topping.
Prepare the Cake Batter
1. Combine all cake ingredients in a mixing bowl.
2. Pour batter into the pan.
3. Bake for 25-35 minutes.
Prepare the Frosting
1. Combine all ingredients in a high-speed blender until smooth.
Checking the Cake
1. This cake is very rich and cannot be tested by inserting a toothpick.
2. It will be ready when you gently press the center and it is not mushy or jiggly.
3. Let cool for 20 minutes before turning it out of the pan.
Frost the Cake
1. Allow cake to cool completely.
2. Top with frosting first, then pour some blueberry puree over the top.
