Ingredients

Phyllo Pastry Dough
- 1 package phyllo pastry dough
- 2 tbsp Olive oil
Filling
- 3 Potatoes, peeled and diced
- 1 c peas
- 1 Onion, chopped
- 1 tbsp Olive oil
- 2 clove Garlic, minced
- 1 tsp Ginger, grated
- 2 tsp Indian curry powder
- 0.5 tsp Salt, or to taste

Directions

Preparing the Potatoes
1. Bring a pot of salted water to a boil.
2. Add the potatoes and cook until tender, about 15-20 minutes.
3. Drain and set aside to cool slightly.
Preparing the Filling
1. While the potatoes are cooking, heat the olive oil in a large skillet over medium heat.
2. Add the onion and cook until softened, about 5 minutes.
3. Add the garlic, ginger, and curry powder and cook for 30 seconds more, until fragrant.
4. Add the cooked potatoes, peas, and salt to the skillet.
5. Mash the potatoes slightly with a fork to incorporate them into the filling.
6. Cook for a few minutes more, until heated through.
Preparing the Phyllo Pastry
1. Unroll the phyllo pastry dough and cover it with a damp cloth to prevent it from drying out.
2. Cut each sheet of phyllo into 4 equal strips.
3. Brush each strip of phyllo with olive oil.
4. Place a heaping tablespoon of the filling at the bottom of the strip.
5. Fold the bottom edge of the strip over the filling, then fold the left and right sides over, creating a triangular shape.
6. Continue folding until you reach the top of the strip.
Baking or Air-Frying the Samosas
1. Preheat your oven to 400°F or your air fryer according to the manufacturer's instructions.
2. Place the filled samosas on a baking sheet or in the air fryer basket.
3. Brush the tops with olive oil.
4. Bake or air-fry until golden brown: Bake the samosas for 18-20 minutes or until golden brown and crispy. For air-frying, cook for 10-12 minutes, or until golden brown and crispy.
Serving the Samosas
1. Serve the hot samosas immediately with your favorite chutney or dipping sauce.
