Ingredients

- 4 Cod filets
- 1 c Flour
- 1 c Cornstarch
- 0.25 c Vodka
- 10 fl oz Beer
- 1 tsp Baking powder
- 3 Yukon gold potatoes, cut into thick fries
- 1 c Mayonnaise
- Fresh dill
- Fresh chives
- fresh tarragon
- 3 cornichons
- malt vinegar
- 1 Lemon

Directions

1. The first thing you want to do it work on your chips since they take the longest. Peel the potatoes and cut into thick batons. Parboil them in salted water with a tablespoon of baking soda. Remove when just a little softened. Let them cool completely and dry out.
2. The next step is to par fry them at 300°F until only a little browning has occurred. Maybe 7-10 minutes. Let them drain on a wire rack and pop them in the freezer for about an hour.
3. Fry them 1 more time at 375°F for 2-3 minutes until golden brown and crispy.
4. In a mixing bowl, combine flour, cornstarch, baking powder, ice cold beer, vodka, and a pinch of salt and whisk to combine until you get a viscous batter.
5. Dip your fish in seasoned flour then into the batter then fry at 375°F until golden brown. This should take 4-6 minutes. Remove from oil and let rest and drain for 5-10 minutes.
6. While the fish is resting make you tartar sauce by combining mayonnaise, chopped dill, chives, tarragon, cornichons, salt pepper and lemon juice.
7. Serve with malt vinegar, tartar sauce, ketchup and enjoy!
