Ingredients

Burger
- 3 oz Ground beef, 80/20
- 3 oz Filipino sweet pork longganisa
- Onion, cut into 1/2 inch thick slices
- 2 American cheese slices
- 1 tbsp Yellow Mustard
- Salt, to taste
- Black pepper, to taste
Animal Sauce-Mariyosep
- 2 tbsp banana ketchup
- 2 tbsp Mayonnaise
- 1 tsp sweet relish

Directions

To make the sauce
1. Add all the ingredients together and mix until well combined.
Prepare the onions and meat
1. Cut the onions into 1/2 inch slices while keeping the rings intact. It’s best to use a large wide onion for this.
2. Take the longganisa out of the casing and shape it into a ball.
3. Weigh out the ground beef, and shape it into a ball as well.
Cooking the onions and meat
1. Heat a pan or skillet on medium high heat.
2. Once hot, add the onions and sear on both sides.
3. Slide the onions to the cool side of the skillet, or if using a pan, just remove.
4. Place the ground beef and longganisa in the pan, and using 2 spatulas, smash it flat. Try to keep it a round shape.
5. Season the beef with salt and pepper.
6. Then add a 1/2 tablespoon yellow mustard onto both the beef and longganisa and spread.
7. Once they are seared on both sides, give them both a flip.
8. Add cheese to both.
9. Once the cheese has melted take them both out, along with the onions.
Building the Flying Dutchman
1. Use one of the onions as the “bottom bun”.
2. Then, add a little sauce.
3. Next, place the burger on top, followed by the longganisa, and a little more sauce.
4. Finally, crown it with the other seared onion.
5. Enjoy warm. Make sure you have a lot of napkins, cause it will get messy.
