- 3 c Dried black bean
- 3 Chorizo
- 6 Slices of thick-cut bacon
- 0.75 lb Dried beef
- 1 Onion
- 4 Cloves of garlic
- 3 Tomatoes, chopped
- 2 tsp Smoked paprika
- 2 tsp Cumin
- 2 tsp Coriander
- 2 tsp Oregano, dried
- 1 tsp Black pepper
- 3 Fresh thyme leaves
- 1 Bay leaf
- Red pepper flakes to taste
- Salt and ground pepper to taste
- 6 c low sodium chicken broth or water

Directions

Feijoada
1. In a large heavy-bottom pot, add oil.
2. Add meats separately and cook until brown. Set aside.
3. In the same pot, sauté onion and garlic until soft and translucent.
4. Add tomates and spices and cook for 5 minutes over medium-high heat
5. Drain and rinse the soaked beans.
6. Add water to pot and reduce the heat to low for 1 hour, stirring occasionally.
7. Add all the meats, the seasonings and the herbs and cook in a the covered pot until the beans are tender.
8. Once the beans are tendered, use a fork and mash the beans. Add more broth if you would like the beans are too dry.
9. Serve with white rice, steamed spinach, Brazilian salsa (see below for recipe), farofa and sliced oranges.
Brazilian salsa
1. 1 large onion, diced, 3 tomates dices, 1 green pepper, 1/3 chopped flat parsley, 1/4 vinegar, 1/2 olive oil, salt and pepper to taste. Combine all the ingredients in a large bowl and mix well.
