Ingredients

Chicken and Vegetables
- 1 lb Chicken thighs, boneless, skinless
- 4 oz Beer, such as a Mexican lager
- 1 Lime, juiced
- 3 clove Garlic, minced
- 4 tbsp Olive oil
- 1 tbsp Chili powder
- 1 tbsp Ground cumin
- 1 tbsp ground coriander
- 1 tbsp Dried oregano
- 1 tbsp Onion powder
- 1 tsp Smoked paprika
- 1 tsp Cayenne
- Salt, to taste
- 1 Yellow onion, sliced
- 2 Bell peppers, sliced

Directions

Mixing the spices
1. Mix the spices in a small bowl.
Preparing the chicken
1. In a separate bowl, add the chicken, beer, lime, garlic, 2 tbsp of olive oil and half of the spice mix.
2. Cover the bowl and refrigerate for 30 minutes to 2 hours.
Cooking the chicken and vegetables
1. Preheat a cast iron pan over medium heat and then add 2 tbsp of olive oil and cook the chicken until done.
2. Remove the chicken and add the onion and bell peppers along with the other half of the seasoning.
3. Saute the veggies for a few minutes or until tender.
Serving the dish
1. Slice the chicken and serve with the veggies, some rice and my cilantro avocado sauce.
