- 0.75 c whole milk
- 4 tbsp Butter
- 1 packet Active dry yeast
- 2.5 c All purpose flour
- 2 tbsp Sugar
- 1 tsp Salt
- 1 Egg
- 3 tbsp everything bagel seasoning

Directions

Preparing the yeast mixture
1. Warm milk and butter over low heat until the butter has melted.
2. Cool to about 110F.
3. Stir in a pinch of sugar and yeast and allow to bloom.
Preparing the dough
1. Combine 2 cups flour, sugar and salt in large bowl.
2. Add yeast mixture and stir with a wooden spoon until it comes together.
3. Knead on a floured work surface, adding as much of the remaining 1/2 cup flour as needed to create a smooth soft ball of dough.
4. Transfer to a greased bowl, cover lightly and allow to double in size, about 1 1/2 hours.
Punching and dividing the dough
1. Punch dough down and transfer to a lightly floured work surface.
2. Divide into 12 even pieces and roll each piece into a small ball.
3. Place on a baking sheet, lined with parchment.
4. Cover and allow to rest for 30 minutes.
Final baking steps
1. Brush with egg wash and sprinkle with bagel seasoning.
2. Bake at 375F, until golden, about 14 to 16 minutes.
3. Enjoy! (Note that I cut this recipe in half from the original in the book which makes 24.)
