Ingredients

For the cauliflower
- 1 cup Flour
- 1 tsp Garlic powder
- 1 tsp Paprika
- pinch salt and fresh black pepper
- 0.5 cup sparkling mineral water
- 1 cup Oil
- 1 cauliflower head
To assemble
- 0.5 cup Red cabbage, sliced
- 0.5 cup cabbage
- 0.5 Carrot, grated
- 1 Tbs White vinegar
- 1 Tbs Olive oil
- 1 Tomato, seedless and julienned
- pinch salt and fresh black pepper
- 12 Corn tortillas
- 1 Avocado, sliced
- 0.25 cup Cilantro, washed and disinfected
- Lime juice, to taste

Directions

For the cauliflower
1. In a bowl, mix the flour, garlic powder, paprika, salt and pepper until fully integrated. Slowly, pour the mineral water until you get a thick batter.
2. Heat the oil in a pan.
3. Coat the cauliflower with flour and dip in your batter. Fry in oil until golden brown.
4. Place to the side on a rack or paper towel.
To assemble
1. In a bowl, mix the cabbages, carrot, vinegar, oil, salt and pepper, mix until fully incorporated, then add the tomatoes. Mix carefully so the tomato doesn’t break down.
2. Assemble your tacos with battered florets, coleslaw, avocado and cilantro. Add lime juice, mayonnaise or sauce if your desire.
3. Share and enjoy.
