Ingredients

Potato salad
- 2 lb Yukon gold potatoes, Peeled and diced into 1” cubes
- 2 Carrots, Peeled and sliced
- 2 Eggs, Boiled and chopped
- 1 Apple, Peeled and diced
- 0.5 c Corn, Optional
- 0.5 c fresh peas, Optional
Dressing
- 1 c Mayonnaise
- 1 tbsp White vinegar
- 2 tbsp Olive oil
- 0.5 Red onion, Finely diced
- 1 tsp italian dressing mix
- salt and pepper, To taste
- 0.5 tsp Paprika, For garnish
- 1 tbsp Chives, Chopped, for garnish

Directions

Cook the ingredients
1. Put the potatoes, carrots and eggs in a large pot; cover with cold water and season with 1 teaspoon of salt. Bring to a boil. Remove the eggs after 12 minutes. Continue to cook potatoes and carrots until tender. Drain and transfer to a large bowl.
2. Meanwhile, peel eggs, chop and set aside.
3. Peel and dice apple. Set aside.
4. Dice red onion. Set aside.
Dressing
1. To a large mixing bowl add mayonnaise, oil, vinegar, red onion, Italian dressing mix and whisk to combine.
Make potato salad
1. Add the potatoes, carrots, eggs, apples, peas and corn (if using) to the mixing bowl and mix to combine.
