Ingredients

For the elote sauce
- 1 cup Frank's Buffalo Sauce
- 1 Tbs Butter
- 0.25 cup Kewpie mayo
- 0.25 cup Sour cream
- 1 tsp Elote Seasoning
- 1 tsp Tajin seasoning
- 2 Tbs freshly squeezed lime juice
For the white sauce
- 1 cup Kewpie mayo, (or regular mayo)
- 1 cup Sour cream
- 1 Tbs Apple cider vinegar
- 1 Tbs Honey
- 1 Tbs Lime juice
For the chicken wings
- 2 lb Chicken wings
- 1 cup corn powder
- 2 cup Buttermilk
- 2 Tbs Hot sauce
- cup All purpose flour
- 2 tsp sea salt
- 2 tsp Black pepper
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 2 tsp Tajin seasoning
- 2 tsp Cumin
- 2 tsp elote seasoning
- 2 tsp Paprika
- 2 tsp Cayenne pepper
- 1 Tbs Cornstarch
- 1 tsp Granulated sugar
- Canola oil, for frying
- Cotija Cheese
- Cilantro

Directions

1. Coat your chicken wings in buttermilk, hot sauce, sugar, and half of the seasonings mentioned. Cover and refrigerate for at least two hours or overnight for best results.
2. In a large bowl, add flour, remaining seasonings, corn powder, and cornstarch.
3. Remove wings from the buttermilk and coat evenly.
4. In a large shallow pot, add canola oil and get to a temperature of 325 degrees.
5. Fry chicken for 5-7 minutes in batches.
6. Remove from the oil.
7. Once the first set of batches are done, get the oil to 350 degrees.
8. Add chicken in batches to fry for 3-5 minutes or until perfectly golden brown.
9. For the sauce, add all of the ingredients in a sauce pan and mix until well combined.
