- 12 oz fire-roasted corn
- 0.333 c Mayonnaise
- 0.25 c crema
- 0.5 c cotija cheese
- 1 Jalapeño, seeded and chopped
- 4 Scallions, sliced
- 0.25 c Cilantro, chopped
- 1 Lime, zested
- 2 tbsp Lime juice
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 0.25 tsp Chili powder
- 0.25 tsp Garlic powder
- 10 puff pastry squares
- 1 Egg, beaten
- 1 tbsp Elote seasoning
- Paprika, for garnish

Directions

Preparation
1. Preheat oven to 450F.
2. In a large bowl, stir together corn, mayo, crema, cotija, jalapeño, scallions, cilantro, lime zest, lime juice, salt, pepper, chili powder and garlic powder.
3. Shape the puff pastry into kite danish shapes.
4. Brush with egg wash, fill the center with a heaping spoonful of filling.
5. Top with more cotija cheese and sprinkle with Elote seasoning if using.
6. Bake until golden brown and flaky, about 20-25 minutes.
7. Remove from the oven and finish off with paprika.
8. Enjoy!
