Ingredients

- 4 Large egg yolks
- 1 tbsp Lemon juice
- 0.5 c melted butter
- pinch Salt
- pinch Cayenne pepper
- 4 Large eggs
- 4 slices sourdough
- 2 tbsp Olive oil
- 8 slices prosciutto
- salt and pepper
- Fresh chives
- pinch Paprika

Directions

Prepare the Hollandaise Sauce
1. In a large bowl, whisk the egg yolks and lemon juice until pale and thick.
2. Set over a double boiler and cook over low heat, stirring in the melted butter slowly while whisking vigorously.
3. Season with salt and cayenne.
4. Keep warm.
5. Thin with hot water if needed.
Prepare the Eggs and Bread
1. Boil the eggs for 7 minutes exactly and then immediately plunge into an ice bath.
2. Peel and set aside.
3. Toast the bread on both sides with olive oil until golden brown.
Assemble the Dish
1. To assemble, top each slice of bread with two slices of prosciutto.
2. Slice the eggs in half and place on top of the prosciutto.
3. Drizzle with hollandaise sauce and finish off with salt, pepper, chives and paprika.
4. Enjoy!
