Ingredients

Pasta
- 8 oz Pasta, of choice
- 1 Eggplant, cubed
- 2 clove Garlic, crushed
- 10 fl oz Tomato sauce
- 1 tbsp Tomato paste
- 1 tbsp Oregano
- 0.5 c Basil leaves
- 1 tsp Salt, or to taste
- 0.5 tsp Pepper
- 0.5 tsp Chili flakes
- 3 tbsp Olive oil
- 0.25 c vegan cheese

Directions

Preparation of Eggplant
1. Cut your eggplant into small cubes and rub them with salt.
2. Cover them with water and let them sit.
3. Preheat your oven to 420 degrees F.
Preparation of Pasta Sauce
1. Heat olive oil over medium-high heat.
2. Roast the crushed garlic for a minute.
3. Add tomato sauce and tomato paste to the pan and let it simmer.
4. Add oregano, salt, pepper, and chili flakes to taste.
Roasting of Eggplant and Cooking of Pasta
1. Drain and rinse the eggplant.
2. Pat them dry with a kitchen towel and massage them with olive oil.
3. Roast them in the oven until they're fully cooked.
4. Cook your pasta al dente and remember to save about 1/2 cup of the cooking water.
Combining and Serving
1. Add the cooked eggplant to the pasta sauce along with the cooked pasta and some cooking water.
2. Toss everything together to combine.
3. Garnish your pasta with fresh basil leaves and a sprinkle of your choice of cheese, as well as some cracked pepper.
4. Enjoy!
