Ingredients

For the milanese
- 1 Large eggplant, in 4 slices
- pinch salt and fresh black pepper
- 0.5 cup Bread crumbs
- 0.5 cup Oatmeal, ground
- 1 Tbs Garlic, chopped
- 1 Tbs Parsley, chopped
- 1 Egg, beaten
- pinch salt and fresh black pepper
- Oil spray
To serve
- 1 Tbs Oil
- 0.5 Red onion, chopped
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 2 cup Whole grain rice, cooked
- 4 Eggs, fried

Directions

For the milanese
1. Pre-heat the oven to 180ºC/350ºF.
2. Season the eggplant with salt and pepper.
3. In a bowl, mix the breadcrumbs, oatmeal, garlic, parsley, salt and pepper. Bread the eggplant, first pass through the egg, then on the breadcrumb mixture. Place the eggplant between two plastic wrap sheets. Flatten lightly while adding more breadcrumbs until it’s about 2 inches thick and completely breaded. Place on a rack over a baking tray and spray with oil. Bake for 15 minutes or until they are golden brown on both sides.
4. Place to the side.
To serve
1. In a pan, heat the oil and add the onion and bell peppers. Cook until softened and lightly browned. Serve with some rice, milanese and bell pepper mixture. Finish the dish with a fried egg.
2. Share and enjoy.
