Main Ingredients
- 1 Chuck Roast
- 2 White Onions
- 6 Mini Peppers
- 2 tbsp Ginger
- 5 cloves Garlic, crushed
- 1 Au Jus Packet
- 2 boxes PHO Beef Broth
- 1 package Rice Noodles
- salt and pepper, for the roast
- 4 tbsp Avocado oil
Garnish
- Jalapeno
- Basil
- Parsley
- Lime
- Sriracha
- Hoisin Sauce
- Fish sauce
- Soy sauce

Directions

Preparing the Roast
1. Season your chuck roast with salt and pepper on both sides.
2. Heat a Dutch oven or stock pan to medium-high heat.
3. Add avocado oil.
4. Sear your roast until it is golden brown on all sides.
5. Once your roast has been seared, remove it from the pan.
6. To the same pan add onions and peppers. Cook them down for 3 minutes.
7. Next add ginger, garlic, and Au Jus packet. Mix together well.
8. Add your roast back and 2 boxes of Beef PHO broth.
9. Let your roast cook for 3-5 hours.
Preparing the Noodles and Serving
1. Towards the end of your roast cooking, start to prepare your rice noodles.
2. Remove your roast from the broth and slice.
3. Strain your broth into another bowl.
4. Plate cooked rice noodles, add broth and top with sliced roast and garnishes.
5. Enjoy!
