Ingredients

Main Dish
- 2 tbsp Olive oil
- 1 Yellow onion, diced
- 1 clove Garlic, finely chopped
- 2 cans diced tomato
- 1 Red bell pepper, cored and diced
- 1 tsp Cumin
- 2 tsp Paprika, smoked
- 2 tsp Paprika, sweet
- 0.5 tsp chili
- 1 small bunch Coriander
- 5 Eggs
- Salt, to taste
- 0.5 block feta

Directions

Preparation of the base
1. In a large skillet, fry diced onion, diced paprika, and spices in a bit of oil until onions are translucent.
2. Then add diced tomatoes and salt and pepper to taste.
3. Mix well and let it simmer for about 5 minutes while stirring occasionally.
Adding the eggs
1. Use a spoon to make little 'nests' in the red base, and carefully crack the eggs inside.
2. Cover with a lid and let it cook for 2-3 minutes on low heat. Make sure the egg yolk stays runny.
Serving
1. Sprinkle over fresh cilantro and feta cheese and serve with grilled bread.
