Ingredients

For the croquettes
- 1 cup Dried peas, soaked for at least 4 hours
- 0.5 Onion, finely chopped
- 4 clove Garlic, chopped
- 2 Tbs Cilantro, washed, disinfected and chopped
- 0.25 tsp Cumin
- 0.25 tsp Paprika
- 0.5 cup Chickpea flour
- pinch salt and fresh black pepper
- 3 Tbs Vegetable oil
For the curry mayonnaise
- 0.25 cup low fat mayonnaise
- 2 Tbs Greek yogurt
- 3 tsp Curry powder
- 1 tsp Cayenne pepper
- 0.5 tsp Ground turmeric
- pinch salt and fresh black pepper

Directions

For the croquettes
1. Drain the soaked peas and pulse in a food processor until you get a paste. Mix this paste with onion, garlic, cilantro and spices until fully incorporated. Shape the croquettes with your hands. Heat the oil in a deep pan and fry the croquettes until they’re golden brown and cooked in the center.
For the curry mayonnaise
1. In a bowl, mix all the ingredients until fully incorporated. Serve the croquettes with the mayonnaise to the side.
2. Serve and enjoy.
Tip:
1. You only need from 3 to 4 pulses to make the base for your croquettes, if you over blend it, it may result in a very soft and hard to manage mixture.
