Ingredients

Main Ingredients
- 2 Chicken thighs, roasted, or use rotisserie chicken
- 0.5 Onion, finely chopped
- 0.5 Carrot, finely chopped
- 1 Garlic clove, minced
- 2 c cooked rice
- 1 tbsp Avocado oil
- 0.25 c Ketchup
- 1 tbsp Butter, optional
- 0.5 tsp chicken stock paste
- fine sea salt, to taste
- Black pepper, to taste
- 2 Large eggs, per serving

Directions

Preparing the Ingredients
1. Heat oil in a skillet over medium heat and cook the onion and carrot for 3-4 minutes.
2. Add the garlic and cook for 1 minute.
3. Add the ketchup, butter, and stock paste and stir to combine.
4. Add the chicken and rice and stir. Taste for seasoning and take it off onto a plate.
Cooking the Eggs and Assembling the Dish
1. Clean the skillet and heat it on medium heat. Crack 2-3 eggs into a bowl and beat them.
2. Pour them into the skillet and when it’s cooked halfway through, take the skillet off the heat and add some rice in the center of the egg, forming a football shape.
3. Wrap the egg around the rice and flip it onto a plate.
4. Enjoy with some extra ketchup!
