Ingredients

Cupcake Ingredients
- 2 Eggs
- 60 grams Mayonnaise
- 30 grams Dutch process cocoa powder
- 15 grams Unsweetened cocoa powder
- 110 grams Flour
- 165 grams White sugar
- 140 grams Oil
- 1 tsp Baking powder
- 0.25 tsp Baking soda
- 2 tsp Instant espresso powder
- 3 tbsp Buttermilk
- 1 tsp Salt
Chocolate buttercream ingredients
- 2 Egg whites
- 150 grams Sugar
- 200 grams Butter
- 20 grams Cocoa powder, 50%

Directions

1. whip the eggs with the sugar until the mixture is lighter in colour and frothy. Mix with the oil and mayo.
2. Sift the dry ingredients into the mixture and fold until it is just mixed through.
3. Fold in the milk last and place in 2 9-inch circle pans. Bake at 350F for 25-30 minutes, until a skewer comes out clean when inserted.
4. For the icing, whip the egg whites and white sugar in a bowl over a pot of boiling water until the sugar is dissolved. Immediately whip in a stand mixer until they are stiff peak.
5. put the butter cubes one by one in the meringue while whipping until they are all completely mixed in.
6. While whipping the icing, whip in the cocoa powder until it is all dissolved and mixed through. Decorate using a piping bag and pastry tip!
