Ingredients

Homemade Chili Oil
- 2 tbsp gochugaru
- 2 tbsp Red chili flakes, sichuan if you can find
- 1 Fresh ginger, 2 inch knob rough chopped
- 2 Garlic cloves, sliced thin
- 2 Cinnamon sticks
- 2 Cloves, whole
- 3 Star anise, whole
- 2 c Vegetable oil
- 1 tbsp msg
- 0.5 tbsp Salt
For the Pork
- 1 lb Ground pork
- 1 Fresh ginger, 2 inch knob peeled and finely diced
- 2 tbsp Soy sauce
- 1 tbsp rice vinegar
- 1 tbsp Mirin, shaoxing wine if available
- Salt, to taste
- 2 tsp Chinese five spice
- 1 tbsp fermented black beans, black bean chili sauce
Sauce
- 2 tbsp Tahini
- 2 tbsp soy sauce
- 0.5 tbsp Sesame oil
- 1 tbsp Rice vinegar, or chinese black vinegar
- 0.5 tbsp Sugar
Noodles
- 1 udon noodles, or any thick fresh noodle. you could even use spaghetti in a pinch!
- 1 Green onions, 1 bunch of the green tops sliced thin for garnish

Directions

Preparing the Chili Oil
1. Heat vegetable oil to 250 degrees F
2. fry your garlic for 7-10 minutes until golden brown and remove. Save them for garnish!
3. Add in the ginger and whole spices and let infuse for 7 minutes
4. While that's happening, mix together your 2 types of chili flakes, salt, and MSG (if used) in a heat safe bowl
5. Remove the aromatics from the oil and increase the temperature to 350
6. Carefully pour the oil over the chili mixture and enjoy the most satisfying sizzle and aroma of you life!
7. Let cool on the counter until room temperature.
Preparing the Sauce and noodles
1. Mix all of the sauce ingredients in a bowl. EXCEPT THE TAHINI
2. Cook the noodles per package instructions
3. Add a layer of tahini to the bottom of the bowl. About a tablespoon
4. Add a tablespoon of sauce and a tablespoon of chili oil
5. Place the cooked noodles directly on top. Then the pork then sliced green onion and your garlic chips and whatever else you want to use as garnish
6. Mix well and enjoy!
