- 1 c Urad Dal
- 2 tbsp Crushed Ginger
- 1 tsp Cumin seeds
- 1 tsp Salt
- 2 c Yogurt
- 0.5 c Milk
- 4 tbsp Chaat Masala
- 1 Red onion, medium
- 2 Russet potatoes, medium
- 6 tbsp Tamarind Sauce
- 1 Cilantro, bunch
- 2 Green Chili
- 1 Mint, bunch

Directions

Preparation of Dal (Beans)
1. Wash and soak your dal (beans) for an hour.
2. Now blend it with a little water, ginger and salt.
3. Once it’s in paste form, add cumin seeds and let it sit for another 15 minutes until oil heats up.
Frying the Dough (Bara)
1. Now fry it by taking small spoonfuls of dough (bara) and carefully adding it to the oil.
2. Fry it until golden brown.
3. Let the excess oil drain out on a lined cookie sheet before adding it to hot water.
4. Hot water does two things. Takes away excess amount of oil and also makes the patty soft and sponge-like.
Preparation of Yogurt Mixtures
1. Take two separate bowls of yogurt.
2. In one add milk and chaat masala.
3. Make Raita “green yogurt” by blending cilantro, mint and green chili and adding it to the other yogurt bowl.
Preparation of Potatoes and Onions
1. Boil 2 large potatoes and cut them into cube size.
2. Chop the onion into moon shape.
Layering the Dish
1. Add two spoonfuls of chaat masala yogurt on the serving dish.
2. Take fried dough ball (bara) and make a tight layer.
3. Then add another layer of yogurt with potatoes.
4. Add more yogurt to cover the potatoes.
5. Now add onions, raita and tamarind paste.
6. Sprinkle more chaat masala on top.
7. Let it sit in the fridge for a minimum of an hour before serving so all the flavors get to know each other.
